Here's a simple recipe for making Halo-Halo, a delicious and colorful Filipino dessert
For the shaved ice:
Snow or shaved ice
1 cup sweetened condensed milk
1 cup evaporated milk
For the Halo-Halo Ingredients (customize as per preference):
Cooked sweetened red beans
Cooked sweetened white beans
Cooked sweetened chickpeas
Nata de coco (coconut gel)
Kaong (sugar palm fruit)
Macapuno (sweetened coconut sport)
Sweetened saba bananas (plantains)
Shredded sweetened coconut
Leche flan (caramel custard)
Ube halaya (purple yam jam)
Shredded Jackfruit
Tapioca pearls (cooked)
Cornflakes or rice crispies (optional for added crunch)
Toppings or garnish: (optional0
Watermelon
Cantaloupe
Peaches
Raspberry
Mint
Cherry
Stick-O
For Assembly:
Tall glasses or bowls
Instructions:
Prepare the Halo-Halo Ingredients:
Cook the sweetened red beans, white beans, chickpeas, and tapioca pearls according to package instructions. Allow them to cool.
Drain the nata de coco, kaong, and macapuno from their syrup and set aside.
Slice the leche flan and shred the jackfruit.
Shave the Ice:
Crush ice in a blender or use a shaved ice machine until you have finely shaved ice. I use snow because we have plenty in Canada.
Assemble the Halo-Halo:
In tall glasses or bowls, start layering the halo-halo ingredients as per your preference.
Begin with a layer of shaved ice.
Add a variety of the prepared halo-halo ingredients on top of the ice.
Drizzle sweetened condensed milk and evaporated milk over the layers.
Repeat the layers until the glass is filled.
Top it Off:
Finish the halo-halo by topping it with more shaved ice.
Drizzle additional sweetened condensed milk and evaporated milk on top.
Garnish with more leche flan, ube halaya, and shredded coconut.
Or optional I use fruits instead.
Serve and Enjoy:
Serve immediately and enjoy the delightful mix of textures and flavors!
